Rasagulla

My first recipe here is that of Rasagulla. I tried this recipe first from the internet and came out really very well. And the mosr important thing about this is its so very easy. I told this to many of my friends and relatives and everybody told it came out very well. Here follows the recipe.

Ingredients:

Milk -1ltr
Sugar-2 cups
Water-3 1/2 cups
Lemon-1
Cardomom-a pinch

Method:
1. Boil the milk in a wide pan and allow it to boil.
2. When the milk boils squeeze the lemon and stir it well till the whey water gets seperated well.
3. After the whey water is seperated drain the panneer in a muslin cloth or in a eerala thundu.
4. Wash it well under the pipe.this is for the lemon smell to go. Then drain it by hanging it in the pipe.
5. Leave it for half an hour.
6. After the water is completely drained knead the paneer throughly well for more than 10 mins and make it soft.
7. Now make the kneaded paneer into balls of required size(either mini or regular). I made small size.
8. Now in a pressure cooker put the sugar and add water. When the sugar dissolves add cardomom powder. place the balls one by one inside the sugar syrup.
9. Now close the lid and put the weight and keep the flame in sim. Leave just one whistle and allow for the pressure to settle.
10. Now the rasagollas are ready to taste.
