Spinach Scrambled Egg Recipe | Palak Egg Burji Recipe

Spinach and Egg together can make wholesome food rich in almost all of the nutrients. This is one such recipe that is quick, easy, tasty and very healthy.

You can mix it with hot rice, or use as a side dish for rice or roti or, as a sandwich stuffing.

Ingredients:

Spinach – 1 bunch, cleaned, and chopped finely

Eggs – 2

Onion – 1 small, finely chopped

Jeera/Cumin seeds – 1 teaspoon

Chilli powder – 1 teaspoon

Turmeric powder – a pinch

Pepper Powder – a pinch

Salt – as needed

Oil –  as needed

Method:

  1. Heat oil in a kadai, splutter jeera and fry onion till they are transparent.
  2. Add chopped palak leaves, chilli powder, turmeric powder and salt, sauté till the leaves just get wilted.
  3. Beat eggs, and pour onto the above stuff, leave the whisked egg for a few seconds so that they get mixed with palak and masalas.
  4. Scramble it to break the eggs. You can scramble it faster or slower depending the size of the egg chunks you want. Faster mixing up leaves smaller pieces whereas slower action gives bigger chunks.
