Spicy Snack from Leftover Rice

A quick snack recipe made from cooked rice (leftovers can be made to the maximum use) with yummy taste of pakodas and with added advantage of no deep frying in oil. All within 15 minutes.

Leftover rice – 2 small cups

Onion – 1

Gram flour – ½ cup

Coriander leaves – 10-15 strands

Chilli powder – 1 teaspoon

Masala powder – 1 teaspoon

(This masala powder could be Pav bhaji masala for vegetarians and chicken or mutton masala powder for non-vegetarians)

Cumin/Jeera Powder – ¼ teaspoon

Salt – as needed

Oil – for frying

 

Method:

  1. Take the rice in a bowl and mash it. (I ran the mixer with rice for a few seconds).
  2. Add gram flour, finely chopped onion, coriander leaves, chilli powder, masala powder, cumin powder and salt.
  3. Mix them all into a dough without adding water.
  4. Roll the dough into small balls. Flatten each of them into mediumly thick platties. (see the pic above).
  5. Heat oil in a pan, place the rice platties and cook both sides till they are light or golden brown in colour. No deep frying, shallow fry is enough.
  6. Tasty rice tikkis ready. Goes well with any chutney or sauce or even without them.

 

PS:

  1. Instead of chilly powder, you can use finely chopped green chillies.
  2. Adding finely chopped ginger pieces can enhance the taste as well good for health.
