Ridge gourd Egg Fry/ Potato Scrambled Egg – Egg Burji – Scrambled Egg Recipes

 

Its like a 2 minute noodles dish, where you can prepare a healthy and tasty side dish for your sambar rice, or roti very fast. 

Ridge Gourd /Potato – 1 big

Egg – 1

Onion – 1 small

Cumin seeds – I teaspoon

Chilli powder – 1 teaspoon or as per your taste

Turmeric powder – a pinch

Salt- as per taste

Oil – as needed

Method:

  1. Heat oil in a pan and crackle the cumin seeds.
  2. Then cook the chopped onion until they are see through.
  3. Add finely chopped ridge gourd or potato and fry along with onion till they are 90% cooked.

(Keep stirring the content especially if it is potato as it might stick to the base of the vessel)

  1. Add chilli powder, turmeric powder and salt and cook them all nicely.
  2. Now break the egg into the content, leave it for a few seconds and then scramble the egg to the size you want the egg pieces to be.
