This is a very tasty cum healthy dish for lunch boxes. Planning the menu for the kids lunch boxes is a real challenge every day. Carrot rice can be prepared in no time and packed once in a week. Carrot as we know is rich in beta carotene, which is very good for eyes.

Here goes the recipe:

Ingredients:

Cooked rice (not hot) – 1 cup

Carrot (grated) – 2

Cinnamon – 1

Clove – 2

Onion – 1 small

Green chilli – 1 (I use only half)

Groundnut – 1 tablespoon

Ghee – little

Oil – as needed

Salt – as needed

Method:

  1. Dry roast groundnuts, peel the skin, grind the nuts in a mixer to a coarse texture. Keep aside.
  2. Heat oil in a kadai, splutter clove and cinnamon. Fry for a few seconds.
  3. Add chopped onion and green chilli, cook them till the onion becomes translucent.
  4. Add the grated carrot and salt, mix them all and fry them all until the carrot is cooked well. You can add a teaspoon of ghee now.
  5. Now add the cooked rice (should not be hot) to the carrot and sprinkle the ground nut powder.
  6. Mix them all in a low flame for a few seconds.
  7. Tasty, healthy carrot rice is ready.
