Home-made Schezwan noodles

Required ingredients:
Capsicum: 1 (cut as julians)
Onion: 1
Tomato: 2
Carrot: 1 (cut as julians)
Green chillies: 2
Salt: As required
Oil: As required
Plain noodles: 2 small packetsIMG_20190617_213028.jpg
Schezwan sauce: 2 table spoon

Schezwan sauce preparation:

Red or Kashmir chillies: 15 nos (soak in water for ½ and hour)
Garlic: 15 cloves (finely chopped)
Ginger: 2 inch (finely chopped)
Vinegar: 1 tablespoon
Brown or normal sugar: 1 tablespoon
Salt: as per taste
Oil: ¼ cup
Grind the soaked chillies into fine paste. Heat oil in a pan and fry the chopped garlic and ginger until it turns light brown. Then add the chilli paste and salt. Turn the heat to medium and stir until the oil spills. Now add sugar and vinegar and stop the flame. Sauce is ready.

Preparation of noodles:

Boil water and cook the noodles for 5-10 min with a little oil and salt. Then drain the water and immerse the noodles in normal water for 2 min and filter it (so that it will be soft)

In a pan heat the oil. Add onions, green chillies, Carrot, Capsicum, tomatoes and little salt. Fry it for 5 min and then add the cooked noodles. Mix it with the veggies and add the sauce. Mix completely and your noodle is ready to serve.
